Ok, not quite literature, but just a spot to share some favorite recipes.

1 bag (1 pound) frozen stir-fry bell peppers and onions, thawed
1 pound ground beef
1 can (29 oz) tomato sauce
1 envelope (1.4 oz) fajita seasoning mix
12 no-boil lasagna noodles (if you can't find these, then go ahead and cook the regular lasagna noodles as on the package)
3 cups shredded Colby-Monterey Jack cheese
1 can (2.25 oz) sliced ripe olives, drained (optional)
1. Heat oven to 350. Spray bottom and sides of rectangular baking dish, 13x9x2 inches, with cooking spray. Drain thawed bell pepper mixture, set aside.
2. Cook ground beef until brown, drain. Stir in tomato sauce and seasoning mix, heat to boiling. Spread 1/2 cup sauce mixture in baking dish. Arrange 4 noodles crosswise, slightly overlapping, on sauce. Spread 1 1/2 cups sauce over noodles, completely covering noodles. Spread pepper mixture evenly over sauce; sprinkle with one cup of cheese.
3. Arrange 4 noodles crosswise, slightly overlapping on cheese. Spread about 1 1/2 cups sauce over noodles, completely covering noodles. Sprinkle one cup of chees and the olives over sauce. Arrange 4 noodles crosswise, slightly overlapping on olives. Spread remaining sauce over noodles, completely covering noodles. Sprinkle with remaining 1 cup cheese.
4. Spray piece of aluminum foil large enough to cover baking dish with cooking spray. Tightly cover baking dish with foil, sprayed side down. Bake about 30 mins or until hot and bubbly. Let stand 15 mins before cutting.

3 cups uncooked bowtie pasta
1 cup frozen whole kernel corn
1/4 cup sliced ripe olives (optional)
1/4 cup chopped fresh cilantro (I used cilantro in a jar)
1/3 cup milk
8 medium green onions, sliced
1 large roma (plum) tomato, chopped
1 jar (16 oz) double Cheddar cheese pasta sauce (in spaghetti aisle)
1 pound chicken breast, cut into strips or cubes
1 cup shredded Colby-Monterey Jack cheese
1. Heat oven to 350. Spray rectangular baking dish, 11x7x1.5 inches, with cooking spray. Cook and drain pasta as directed on package.
2. Mix pasta and remaining ingredients except cheese in large bowl. Spoon into backing dish.
3. Cover and bake 45 mins. Sprinkle with cheese. Bake uncovered 5 to 10 minutes or until cheese is melted and casserole is bubbly.

2 pounds stew meat
1 (14oz) can Mexican-style stewed tomatoes, undrained
1 (10.5oz) can beef broth
1 (8oz) jar medium or mild picante sauce
1 (10oz) package frozen whole kernel corn
3 carrots, scraped and cut into 1/2 inch slices
1 medium onion, cut into thin wedges
2 cloves garlic, minced
1 teaspoon ground cumin
1/2 teaspoon salt
1/3 cup water
1/4 cup all-purpose flour
Combine all ingredients except water and flour in crockpot. Cover and cook on High 5 hours, or on Low 10 hours or until meat is tender.
Combine water and flour, stirring until smooth; stir into meat mixture in crockpot. Cook stew, uncovered, on High 15 minutes or until thickened, stirring often.

One shot kahula, one shot vodka, one shot bailey's irish creme. Add ice. Takes like chocolate milk , but after about six you begin to realize the difference.
p.s. nobody said it had to be a food recipe :P

This is a little something I have eaten since I was a wee lad of barely double digits.
Spread peanut butter liberally on two pieces of bread. Now, in between, put some dill pickle relish.
Great with milk.

1 lb chicken breast or tenders, cut into cubes (see note)
1 large onion, chopped
2 cloves garlic, minced
1 tablespoon cooking oil
1 teaspoon ground cumin
1/2 teaspoon cayenne pepper (optional)
1/2 teaspoon salt
1/2 teaspoon pepper
1 28oz can diced tomatoes
1 15oz can tomato sauce
4 pickled jalapeno peppers, seeded and chopped (optional)
1 15oz can black beans, rinsed and drained
1 15oz can great northern beans, rinsed and drained
In a large saucepan cook chicken, onion and garlic in hot oil over medium heat for 8 to 10 minutes, or until chicken is no longer pink and onion is tender. Drain off fat.
Add cumin, salt and pepper (and optional cayenne pepper); cook and stir for 1 minute more. Stir in tomatoes, tomato sauce and jalapeno peppers (if used). Bring to boiling. Reduce heat; cover and simmer 20 mins, stirring occasionally. Add black beans and great northern beans. Cook about 5 mins more.
(Note: The original recipe called for 1 pound of ground raw chicken, but I prefer the chunks of chicken. Use whichever you prefer)

1 16oz package of penne pasta
1 28oz can diced tomatoes
1 15oz can tomato sauce
2 tablespoons olive or vegetable oil
2 cloves garlic, minced
1/2 to 1 teaspoon crushed red pepper
2 tablespoons parsley
1 tablespoon tomato paste
1/2 cup grated or shredded parmesan cheese
Cook and drain pasta as directed on package.
Heat oil in 12 inch skillet over medium-high heat. Cook garlic, red pepper and parsley in oil about 5 mins, stirring frequently until garlic just begins to turn golden. Stir in diced tomatoes, tomato sauce and tomato paste. Heat to boiling; reduce heat. Cover and simmer about 10 mins; stirring occasionally until slightly thickened.
Add pasta and 1/4 cup of the cheese to the tomato mixture. Cook about 3 minutes, until pasta evenly coated. Sprinkle with remaining cheese.

Easy Jambalaya
1 pk of 6 chicken breasts, cooked and deboned (reserve the broth)
1/4 cup of margarine or olive oil
1 cup of chopped celery
1 cup of chopped onion
1 cup of chopped green pepper
1 cup of fresh chopped parsley
2 cloves garlic, minced
2 cans 16 oz tomatoes
1 6 oz can tomato paste
2 bay leaves
3 teaspoons thyme
1 tablespoon Zataran's seasoning
1/4 teaspoon cayenne
1/4 teaspoon black pepper
2 cups rice
1 pound smoked sausage, sliced
3 pounds raw shrimp, peeled and deveined
dash tobasco
(adjust spices for perferred taste)
Saute' the celery, onion and green pepper in the olive oil (or margarine), add parsley after vegetables have begun to wilt. Add garlic, tomatoes with the liquid and the tomato paste. Allow mixture to come to a slight boil and add the spices: bay leaves, thyme, creole seasoning, cayenne and black pepper. Add four cups of chicken broth and bring to a boil. Add rice, mix thoroughly and add the chicken and sausage. The shrimp should be added just before the rice has absorbed all the liquid. (never cook shrimp to long or it will be tough). If you need more liquid for the rice, add more chicken broth. The tobasco sauce is for the table, in case it is not spicey enough.

This recipe I have made many times and get requests for it alot.
Chess Squares
1 box Butter cake mix
1 stick margarine, softened
1 egg
Combine all ingredients. Mixture will be like dough. Press into ungreased 13 x 9 inch pan.
1 8 ounce cream cheese, softened
1 box powdered sugar
3 eggs
Mix cream cheese and sugar with electric mixer. Add eggs one at a time on low speed until smooth. Pour over cake mixture and bake at 325 for 45 minutes. Let cool before cutting into squares.

Artichoke Rice
2 tablespoons margarine
8 ounces mushrooms (fresh preferred)
1 onion, chopped
1 1/2 teaspoons garlic
1/2 teaspoon pepper
1/2 teaspoon salt
2 cups chicken broth
1 cup rice
2 medium tomatoes chopped
2 cans (7 ounces each) artichoke hearts, drained and quartered
In large skillet, melt margarine and saute' mushrooms, onion, garlic, salt and pepper until tender. Add broth and rice. Bring to a boil: reduce heat, cover and simmer 25 minutes or until liquid is absorbed. Stir in tomatoes and artichoke hearts; let stand a few minutes then serve.
(for more of a cajun style dish, stir in 1 cup of cooked shrimp, chicken and/or pork and 1/2 teaspoon zatarans seasoning or hot pepper sauce.)

My Grandmothers Chicken Broccoli
1 whole chicken
1 large bag of broccoli
1 lb american cheese
2 cans cream of mushroom
1 can chicken broth (or use broth from whole chicken)
salt and pepper
Boil chicken till falling off the bone then remove from broth and debone. Mix cream of mushroom and chicken broth then add chicken, broccoli, cheese, salt and pepper and mix gently but well. Place in a baking pan and cook in the oven at 350 for 30-45 mins.

Shrimp Mold
1 large pkg. Philadelphia brand cream cheese
1 pkg (envelope) unflavored gelatine
1/3 cup water (to dissolve gelatine)
3/4 cup celery, chopped fine
4/5 shallots
salt and tabasco to taste
2 cups shrimp (peeled and deveined)
1 can tomato soup
1 cup mayonnaise
Dissolve gelatine in hot water. Heat soup, add cheese. Add gelatine and let simmer awhile. Add other ingredients. Chill for a few hours and serve.

Artichoke Balls
2 sm cans artichoke hearts
1 cup bread crumbs
2 tablespoon parmesan cheese
2 raw eggs
6 tablespoons olive oil
6 toes garlic, minced fine
Pan fry garlic in oil; chop fine or use blender for artichokes and garlic. Add cheese, bread crumbs and eggs (well beaten). Cook 5 mins. Cool. Form into bite size balls. Roll in cheese and bread crumbs mixture. Place in refrigerator till ready to eat.

Seafood and Okra Gumbo
2 lbs shrimp
1 cup crabmeat (or about 6 crabs)
3 tablespoons flour
3 tablespoons oil
3 cups okra, chopped
2 med onions, chopped
2 cloves garlic, chopped
1 can tomatoes
3 quarts water
1 bay leaf
salt and pepper
cayenne pepper, if desired
Andouille, if desired (this is a sausage that is made in Louisiana, you can add another type of sausage if you wish, preferrably smoked beef)
Peel shrimp and devein. Make a roux of flour and oil (if you need directions on how to make a roux, let me know). Add shrimp and cook a few mins until they become pink. Saute onion. Add okra and fry until brown. Add tomatoes when okra is almost cooked. Add water, garlic, bay leaf, salt and pepper. Then add shrimp, roux, crabmeat, and Andouille. Cover and cook slowly for 1 1/2 hours.

little late for the holidays, but I usually make these little yorkies for an easy dinner roll to go with nice dinners and such.
English Yorkshire Puddings
1 cup plus 2 tbsp milk
2 large eggs
1 large egg yolk
1 cup all-purpose flour
1 tsp salt
mix all ingredients in a blender for 30 seconds till batter is smooth. let stand covered one hour.
pre-heat oven to 425. Place 1 tbsp of vegetable oil into each of the muffin holes in a muffin pan, pop into hot oven until "smoking hot". take out of oven and pour batter into muffin tray filling up to 2/3 full with batter,moving fast, so oil doesnt cool down. Bake for 18-20 minutes or until golden brown, and do not open oven door prior to 15 minutes into cooking or they may not rise properly. Remove from muffin tray immediatly after cooking, and serve along with roast, or whatever u like, and dont forget the gravy! Enjoy =)

rinse frog leggs then pat dry lightly flour (salt, and red pepper the flour)
place butter in hot skillet cover bottem well.
place frog leggs in hot butter when they quit jerking they are done

Another easy, yummy one.
Crockpot Italian Beef
3-4 lb roast
1 15oz can of tomato sauce (they called for 8oz can, but I didn't have any, and I liked the additional juice)
2.5 cups of water
1 t salt (I skipped this)
1 t pepper
1 t parsley flakes
1 t garlic powder
1 t basil
1 t oregano
dash Worcestershire sauce
dash soy sauce
1 package Italian Dressing mix (good seasons or other kind)
Combine all ingredients except roast in a bowl, mix thoroughly.
Put roast in crockpot, pour mixed ingredients over.
Cook 6-8 hours on high.
About 1.5 hours before serving, flake meat apart with fork and continue cooking.
I served it over brown rice and it was great!

I have done this before....be prepared to be very hungry. It does work, but I wouldn't recommend for any length of time. I think it's a great way to jump start your weight loss , but that's about it.

If you ask most any doctor losing more than 4 pounds a week is unhealthy and can cause problems. I would say to take note of what it says, "Used in hospital for patients that need to lose a lot weight" I could see this jumpstarting your diet, but afterwords find a more ideal diet and excersise routinely. That's my two cents.

I wouldn't do it. Not only does this sound like you'd be left feeling unsatisfied all the time, but the meals sound unappetizing! In my opinion anything that promises dramatic results like this is just a temporary fix. I could easily see myself going on a binge after 3 days of near starving myself!

Easy Chicken Enchiladas
1 10oz can Enchilada Sauce
4oz cream cheese cubed (I used light cream cheese)
1 1/2 cups salsa
2 cups cubed cooked chicken
1 15.5oz can pinto beans, rinsed and drained
1 4oz can chopped green chilies
10 6inch flour tortillas (I used 6 10inch)
1 cup shredded mexican cheese
Shredded lettuce, chopped tomato, sour cream, sliced olives, optional
1. Spoon 1/2 cup enchilada sauce into greased 13x9 baking dish. In large saucepan, cook and stir the salsa and cream cheese over med heat for 2-3 minutes or until blended. Stir in the chicken, beans and chilies.
2. Place about 6 tablespoons of the chicken mixture down the center of each tortilla. Roll up and place seam side down over sauce. Top with remaining enchilada sauce, sprinkle with cheese.
3. Cover and bake at 350 degrees for 25-30 minutes. Serve with lettuce, tomato, sour cream and olives if desired.

Pepper jack chicken pasta
1/4 cup chopped onion
1/4 chopped sweet red pepper
1/2 teaspoon minced garlic
1 tablespoon vegetable oil (I used olive oil)
1 can condensed southwest style pepper jack soup
1 package (9oz) ready-to-use southwestern chicken strips (I just used regular chicken strips)
3/4 water
1 can (15oz) black beans, rinsed and drained
1/4 cup shredded monterey jack cheese, optional
I also added a little cajun spices to this. But I like things a little spicy.
1. In large skillet (I use a wok), saute onion, red pepper, and garlic in oil until tender. Stir in the soup, chicken and water. Bring to a boil. Reduce heat; cover and simmer for 8 minutes.
2. Stir in beans, heat through.
3. Serve over pasta (I used penne).

Crockpot Italian Beef
1 3lb Beef Roast
1 8 oz jar of Pepperocini peppers (stems removed), save the juice.
1 Lg onion (cut in a size you prefer, I prefer larger peices)
2 cloves garlic
Salt
Fresh ground pepper
Coat the roast in a light layer of vegetable oil, and salt each side lightly.
Brown the roast in a pan that is NOT non-stick, make sure you don't turn the roast until the side is seared brown. After browned place the roast in a crockpot, with the chopped onion.
Use a little of the juice from the jar of peppers to deglaze the pan the roast was seared in. Pour the deglazed liquid over the roast, add the peppers and the rest of the juice, crush the garlic and add to the crockpot, grind in a few good grinds of the black pepper.
Cook the roast until tender, remove the roast from the crockpot and shred with a fork removing the fat, return the beef to the crockpot.
Serve on hearty buns that will be able to absorb the juice and stay together.
The juice with the peppers and onions can be used as a relish on the sandwiches.

Skinny Tortilla Soup
1 can refried beans (I used fat free)
1 can black beans (I used no salt added)
1 can reduced-sodium chicken broth
1.5 cups frozen corn
3/4 cup chunky salsa
3/4 cup cubed cooked chicken breast
1/2 cup water
2 cups shredded cheddar cheese
28 tortilla chips
1. In large saucepan combine first 7 ingredients. Bring to boil, reduce heat, cover and simmer for 10 mins. Add 1 cup of cheese. Cook and stir over low heat until melted. Crumble some of the tortilla chips in soup bowls, ladle soup over chips. Top with two crumbled chips, sprinkle with remaining cheese.

Peanut Pudding Dessert
All I can say is...yum!
1/2 cup cold butter
1 cup all-purpose flour
2/3 cup chopped dry roasted peanuts
1 8oz package of cream cheese, softened
1 cup confectioners sugar
1/3 cup peanut butter
1 8oz carton whipped topping
2 3/4 cups of cold milk
1 3.9oz package of instant chocolate pudding mix
1 3.9ox package of instant vanilla pudding mix
1. In a bowl, cut butter into flour until crumbly. Stir in peanuts. Press into ungreased 13x9x2 baking dish. Bake at 350 for 16-20 mins or until lightly browned. Cool on wire rack.
2. In mixing bowl, beat cream cheese, confectioners sugar and peanut butter until smooth. Fold in 1 1/2 cups whipped topping. Carefully spread mixture over crust.
3. In a bowl, whisk the milk and pudding mixes for 2 minutes. Let stand for 2 minutes. Carefully spread over cream cheese layer. Top with remaining whipped topping.
4. Refrigerate until serving.

Green Bean Goulash
1 lb lean ground beef, browned (I use ground turkey)
1 small onion, diced
1 clove garlic, minced
1 tsp salt
pepper to taste
1-2 Tbsp chili powder
1 rib celery, diced
1/2 small bell pepper, diced
1 can Italian style tomatoes (for some reason, I always forget this part)
1 small can tomato sauce (I use a regular size can)
1 16 oz can green beans
1-2 c reduced fat cheddar cheese
Brown ground beef with onion, garlic, celery and green pepper. Drain.
Add salt, pepper and chili powder. Stir in tomatoes, tomato sauce and green beans.
Simmer over medium heat. Reduce heat and top with reduced fat cheddar cheese. Cover till melted.
Serves 4

Pepper Salad
1 each .. yellow, red, orange, green ... I slice them thin and cut in half
1 onion ... just white as the color bleeds out anyway later .. slice same thickness as peppers
1 clove garlic ... halved
sesame seeds / sunflower seeds ( optional )
3/4 chopped walnuts ( optional )
put the peppers and onion into a large bowl ... add garlic
Bring to a boil :
3 cups vinager
1 cup water
1/2 cup sugar
Pour on peppers / onions .. let get cold then drain
add walnuts, sunflower seeds ...
I just add 1/2 cup ranch dressing @ salt / pepper to taste, but it's good without dressing at all.

Mushroom Pizza
Portabellow mushrooms 2 per person .. take off stems, clean out with a spoon, put in oven to start cooking while your chopping veggies, slicing meat, grating cheese.
Slice whatever veggies you like on pizza, same as meats & cheese
Drain mushroom juice ( I use it in homemade soup if I have it on the go too ) or just chuck it
Add:
1 Tablespoon pizza sauce
Veggies
Meat
Cheese
Put back into oven till cheese is melted and veggies / meat are done
With a salad this is a nice change for supper
